    The video mentions *trams*-fatty acids in vegetable oil. These would make up a small proportion of the fatty acids in shortening, but the bulk of fatty acids, especially in pourable oils (which haven't been hydrogenated) have all of their olefin groups in the *cis* configuration, rather than the *trans*. The transesterification process works just as well with either *cis* or *trans* fats, because it acts on the ester groups, rather than the olefin groups that make up the majority of an oil molecule's mass.
